Chicken, leek and fennel tartlet, finished with a balsamic glaze and cress.
Mains
Bram Stoker's Beef - Angus eye rump medallion with red wine jus'. Potatoes roasted in duck fat, rosemary and sea salt. Served with fresh forest leaf salad.
Count Vlad's Chicken - Oven-roasted chicken breast filled with caramelised Asian pear, wrapped in prosciutto and served with a silky tarragon creme fraiche sauce.
Furnace of Fish - Baked Barramundi fillet with a lime and coconut sauce. Served on ginger-infused kumara mash.
Non-Carnivorous Delight - Cauliflower, chickpea and quinoa fritters, combined with fresh spinach, herbs and pulses, topped with a beetroot relish. (V) (GF) (DF)

Death by Chocolate - Lychee liqueur mousse, set in a dark Belgian chocolate coffin, lined with local Gold Coast neighbourhood honey and finished with a passionfruit coulis.
